INSTRUCTIONS

1. Preheat your oven to 350 F or 180 C degrees. Coat a baking dish with cooking spray and set aside.

2. Meanwhile, season the steaks with salt and pepper, and dredge in flour. Reserve the excess flour.

3. In a pan over medium heat, heat 2 tbsp of the olive oil. Add the steaks to the pan and cook for about 3 minutes per side. Transfer to the baking dish.

4. Heat the oil for the sauce in the same pan you used earlier. Add the onions and cook for about 5 minutes, or until soft. Add the mushrooms and cook for 5 more minutes. Stir in the garlic, and cook for 30 seconds, or just until fragrant. Stir in the reserved flour. Cook for 2 minutes.

5. Pour the wine and chicken stock into the pan. Whisk briefly to get rid of the lumps, but be careful not to mash the mushrooms. Cook for a couple of minutes, until the sauce reaches your desired consistency.

6. Meanwhile, place the bacon into a microwave and cook until it becomes crisp. Crumble the bacon into the sauce, stir in the tarragon, salt, and pepper.

7. Pour the sauce over the cube steaks. Place the baking dish in the oven, and bake for 45 minutes. Serve and enjoy!

INSTRUCTIONS

2. Combine the flour, salt, and pepper, in a shallow dish. In another shallow dish, combine the basil, crushed crackers, and parmesan cheese.

3. In a bowl, whisk together the water and eggs.

4. Heat the oil in a pan over medium heat. Meanwhile, dip the cube steaks in the flour first, then in the egg mixture, and finally, coat with the parmesan/cracker mixture. Place in the pan and fry for about 3 minutes per side. Transfer to the baking dish. Place in the oven and bake for 25 minutes.

5. Meanwhile, whisk together all of the sauce ingredients. Remove the baking dish from the oven and pour the sauce over the steaks. Top each steak with a mozzarella slice. Sprinkle the parmesan cheese and oregano over.

6. Return to the oven and bake for additional 5 minutes. Serve and enjoy!

3. Add the onions to the skillet, and saute in the pancetta grease for about 5 minutes. Add the garlic and cook it for 30 seconds, or just until it becomes fragrant.

4. Stir in the remaining sauce ingredients. Bring the sauce to a bubble. Reduce the heat and simmer for about 3 or 4 minutes, or until thickened. Stir in the cooked pancetta cubes.

5. Pour the sauce over the cooked cubed steaks. Serve and enjoy!
