Prosciutto Wrapped Cajun Pork Loin

Ingredients

    6 strips of Prosciutto

    1 ½ tbsp Brown Sugar

    1 tbsp Cajun Seasoning
Glaze

    1 tbsp Dijon Mustard (I used the grainy kind)

    3 tbsp of Apricot Preserves (alternatively, you can use Apricot jam)

INSTRUCTIONS

1. In a small bowl, combine the brown sugar and Cajun seasoning. Rinse and pat dry the pork loin, and then rub the Cajun/sugar mixture all over it.

2. Wrap each of the prosciutto strips around the pork loin, and secure them with toothpicks or skewers. Make sure to trim the ends so it will be easier for you to cook it.

3. Heat a skillet over medium heat. Add the wrapped pork loin, and cook for about 10-15 minutes, or until it becomes browned on all sides.

4. If your skillet is oven safe, you can directly transfer it in a preheated to 200 C or 400 F degrees oven. If not, simply transfer the meat to a baking dish. Roast for 10 minutes.

5. Meanwhile, combine the glaze ingredients in a small bowl. Brush the glaze all over the pork. Return the pork loin to oven and cook for additional 5 minutes. Let rest for a couple of minutes before slicing. Serve and enjoy!

Pork Loin Roast

Ingredients

3 pounds boneless Pork Loin

1 tbsp Olive Oil

1 tsp Cinnamon

1 tsp Cayenne Pepper

1 tbsp Smoked Paprika

2 tsp Onion Powder

1 tbsp Garlic Powder

2 tsp Hot Sauce

2 tsp Black Pepper

½ tsp Salt

2 tbsp Apple Cider Vinegar

INSTRUCTIONS

1. Preheat your oven to 190 C or 375 F degrees. Rinse the meat and pat it dry. In a small bowl, combine all of the spices, along with the vinegar and olive oil, making a wet spice rub for your pork roast.

2. Rub this spice mixture all over the pork loin with your fingers.

3. If you want the pork roast to be crispier on the outside, you can heat a skillet over medium heat and cook the pork, until it becomes brown on all sides or about 10 minutes in total. This step is optional.

4. Place the pork loin in a baking dish. Roast for about 40 minutes. If you have skipped step 3, you may need to roast it for about 55 minutes. The internal temperature of the meat should read at least 62 C or 145 F degrees.

Let the meat rest for a couple of minutes, before slicing it. Enjoy!

3. Put the plastic bag in a large bowl, making sure that the meat is submerged in marinade. Refrigerate the meat overnight.

4. Let the meat come to room temperature. Preheat your oven to 160 C or 325 F degrees. Remove the pork from the Ziploc bag and discard the Coca-Cola marinade.

5. Place the pork roast in a roasting pan and transfer to the oven. Roast for about 90-120 minutes.

Let sit for a couple of minutes before slicing. Enjoy!

INSTRUCTIONS

1. In a large saucepan, combine all of the marinade ingredients. Place the saucepan over medium heat. Cook until the marinade starts to boil. Transfer the marinade to a blender. Blend until smooth, and then pour the marinade to a bowl.

2. Place the pork in a large Ziploc bag. Pour the marinade over. Seal the bag and shake it carefully to coat the meat well. Place the bag in a large bowl, making sure that the meat will stay submerged in marinade. Refrigerate for 8 hours.

3. Take the meat out of the fridge, and let it come to room temperature, about 40 minutes. Reserve the marinade. Meanwhile, preheat your oven to 160 C or 375 F degrees.

4. Drizzle the olive oil in a roasting pan, and place the pork in it. Roast for about 90 minutes. Transfer the pork to a cutting board.

5. Place the reserved marinade in a saucepan over medium heat, and bring it to a boil. Combine the butter and flour by rubbing them with your fingers. Whisk the butter/flour mixture into the saucepan. Cook until the sauce thickens.

6. Slice the pork loin and serve topped with the sauce. Enjoy!
