Ingredients

Ingredients
  • pagelines
    8 oz of smoked salmon (220 grams)
  • pagelines
    1 kg floury potatoes
  • pagelines
    8 spring onions with the bulbs, chopped 
  • pagelines
    2 medium sized eggs
  • pagelines
    2 tablespoons mayonnaise
  • pagelines
    4 tablespoons small capers
  • pagelines
    4 tablespoons chopped parsley
  • pagelines
    10 drops of tabasco sauce
  • pagelines
    125 grams of breadcrumbs
  • pagelines
    1 oz of butter
  • pagelines
    A pinch of salt
  • pagelines
    A pinch of black pepper
To serve
  • pagelines
    2 tablespoons of mayonnaise
  • pagelines
    1 teaspoon of crushed garlic
  • pagelines
    1 teaspoon of lemon juice
  • pagelines
    1 tablespoon of chopped parsley

Instructions

1. Boil the potatoes in a pot with water and then drain and set aside. Mash the potatoes with the spring onions properly.

2. Separate the eggs and mix the egg yolks to the potato mash and mix in the mayonnaise as well.

3. Now add in the smoked salmon, capers, chopped parsley and the tabasco sauce. Mix well.

4. Season with salt and pepper.

5. Divide the mixture in to 8 portions and press them in to a pastry cutter and then brush the fishcakes with egg whites and then coat them in to the breadcrumbs.

6. Melt butter in a pan and then fry the fishcakes on both the sides.

7. To serve, mix the mayonnaise with the crushed garlic, lemon juice and the chopped parsley.

Recipe notes

You can even freeze these fishcakes, thaw them a while before frying them in a pan.
