Spicy Sweet Beef Jerky

Ingredients

2 pounds (900-1000 g) Flank Steak
1 tbsp grated Ginger
¼ cup Honey
½ cup Soy Sauce
1 ½ tbsp Red Pepper Flakes
½ tsp minced Garlic
¼ tsp Black Pepper

INSTRUCTIONS

1. Freeze the steak partially (about 20 minutes), to make it more sliceable. Remove the excess fat (if any), and slice it into strips, about 1/4-inch thick.
2. Place the remaining ingredients in a small bowl and whisk to combine.
    Place the steak strips in a Ziploc bag, then pour the sweet and spicy mixture over.
    Seal the bag and shake it to well coat the meat. Place in the fridge and let marinate for at least 4 hours.
3. Place in your dehydrator and cook for about 5 ½ hours on 70 C or 155 F degrees.
    You can also dehydrate in your oven by cooking at 85 C or 180 F degrees for at least 5 hours. Enjoy!

Recipe Notes

Remember, the longer you dehydrate the beef, the crunchier it gets. If you want your beef to be tenderer, then about 4 hours will do.

If you want it to be crunchy, you should leave it to dehydrate overnight. To safely dehydrate the meat and kill pathogens, your dehydrator or oven must be able to maintain at least 70 C or 155 F degrees of temperature. Just keep in mind that you are not cooking, but drying the meet. The temperature has to be low.
